A small artisanal bakery in Nordfjordeid run by three chefs
The Story of Minibakeriet
Leon Knapskog opened Minibakeriet in 2015 without having any previous bakery experience.
He was, however, a professional chef, and he had previously worked in many kitchens around the world, including michelin star restaurants in California, the Norwegian embassy in Paris, and even at the Royal Yacht and the Royal Palace of Norway.
So regardless of his lacking bakery knowledge, he believed in this little bakery project. Partly because of his background from these kitchens, but mostly because he was certain of one thing: Everyone loves home made bread straight from the oven, even if it is made by an amateur.
So with this in mind the concept was clear from the start, Everything was to be baked fresh every morning, and he would use his knowledge as a cook to make an exciting sandwich menu that would change regularly.
Several other cooks joined the team over the years to help evolve and improve on this concept. And in 2025, when they decided to open a second store in Stryn, two of the chefs that had been with him the longest, became part owners.
Espen Sandmark Heia and Γyvind Haugland, both good friends of Leon, joined the owner team. And now, as Minibakeriet goes into its second decade and have opened a second store, these three chefs work together with an amazing team of bakers, drivers and store clerks to create a little everyday magic in the charming streets of Nordfjordeid and Stryn.
